Toast to 2018 with this selection of stylish cocktails to see in the New Year.

 

Ginger & Thyme Margarita

Prep time: 10 mins / Cook time: 0 mins / Serves: 2

You will need:

  • A jar of crystallized ginger in syrup
  • A few sprigs of fresh thyme, washed
  • The juice of 4 fresh limes
  • Coarse ground sea salt
  • 2 tots of Hope on Hopkins Esperanza

Fill a cocktail shaker with ice. Add in about 2 tablespoons of the ginger syrup, a sprig of thyme, the lime juice and the Esperanza. Shake to combine. Rub the rim of two tumblers with a little ginger syrup and dip into the salt. Fill the tumblers with crushed ice and a few pieces of the crystallized ginger and pour over the Esperanza mixture. Garnish with a few extra sprigs of thyme.

Serve immediately.

Black Forest Fizz

Prep time: 5 mins / Cook time: 0 mins / Serves: 2

You will need:

  • A jar of pitted black cherries in heavy syrup
  • 500ml chilled Prosecco or sparkling white wine
  • 2 tots Mediterranean Gin
  • 2 sprigs of fresh rosemary, to garnish

Fill a cocktail shaker with ice, 4 tablespoons of the cherry syrup and the gin. Shake to combine. Divide the mixture between two champagne coupe glasses and top up with the Prosecco or sparkling wine and garnish with a wreath of rosemary and a few black cherries threaded on to a cocktail skewer.

Serve immediately.

Spicy Strawberry G&T

Prep time: 5 mins / Cook time: 0 mins / Serves: 2

You will need:

  • 4 large strawberries, washed
  • 1 tablespoon of whole pink peppercorns
  • 500ml chilled tonic water
  • 2 tots of Salt River Gin

Finely slice the strawberries. Fill two tumblers with ice and add the strawberry slices, peppercorns and gin. Top up with tonic water.

Serve immediately.

Rooibos & Honey Cocktail

Prep time: 5 mins / Cook time: 15 mins plus 1 hour cooling / Serves: 2

You will need:

  • 1 rooibos tea bag
  • 150ml boiling water
  • 4 tablespoons fynbos honey
  • 1 lemon, juiced
  • 500ml soda water
  • 2 tots Esperanza
  • Dehydrated lemon, to garnish

Steep the rooibos tea bag in the boiling water for 5 minutes. Discard the tea bag and pour the black tea into a small saucepan. Add the honey and simmer over low heat until the mixture forms a light syrup. Allow to cool. Fill a cocktail shaker with ice and add in the rooibos syrup, lemon juice and Esperanza. Shake to combine and divide the mixture between two highball glasses. Add ice and top up with soda water. Garnish with the dehydrated lemon.

Serve immediately.

Ruby Grapefruit Margarita

Prep time: 15 mins / Cook time: 0 mins / Serves: 2

You will need:

  • 4 to 6 ruby grapefruit or 500ml grapefruit juice
  • 6 sprigs of fresh mint, washed
  • 2 tots of Esperanza
  • Coarse ground sea salt
  • 1 teaspoon honey

Using a citrus juicer, extract the juice from the grapefruits, keeping the peels. Place half the peel from a grapefruit into a mortar along with 4 sprigs of mint and crush with the pestle. Discard the peel and put the crushed mint into a cocktail shaker. Add in ice and the Esperanza and shake until combined. Rub the rim of two tumblers with a little honey and dip into the salt. Fill each glass with crushed ice and divide the Esperanza mixture between them. Top off the margaritas with the ruby grapefruit juice and garnish with the remaining two sprigs of mint.

Serve immediately.

6 COCKTAILS TO SEE IN THE NEW YEAR

 

Black Olive & Basil Smash

Prep time: 10 mins / Cook time: 0 mins / Serves: 2

You will need:

  • 1 packet of pitted black olives
  • A generous handful of fresh basil, washed
  • 1 lemon, juiced
  • 500ml tonic water
  • 2 tots Mediterranean Gin

In a mortar and pestle, roughly smash about 6 olives with a few sprigs of basil. Fill a tumbler with ice and add the basil-olive mixture, the lemon juice and the gin. Shake to combine and infuse the gin. Divide the mixture between two tumblers filled with ice and top up with tonic water. Garnish with fresh basil and a few black olives skewered on cocktail sticks.

Serve immediately.
